GUSTO has been my exclusive supplier for fresh seafood since the beginning of my tenure as executive chef of the Highlands Falls Country Club. Duke, my representative, was waiting at the door on my first day with a promise of pristine product, fair prices, and customer service second to none. Well, if I only had a nickel for every time I heard a fish monger say that! However, David, Duke and the team at GUSTO have not disappointed me over the past three years. Not to say there haven't been supply problems or small communication breakdowns. Let's face it, this is a wild product and inherent to the animal. Considering the amount of product they supply me on an annual basis, I don't see how they do it so well, but I'm glad they do. Most important to me is the expeditious and honest manner that accompanies these infrequent miscues. This is the hallmark of a great business model and it is rare. To me, it's how my purveyors handle the mistakes (mine or theirs) that separates the wheat from the chaff. In my opinion, a purveyor that can cover my mistakes is like a great dishwasher or line cook...you better hang on to them. Great service, great domestic product, interesting species, and a desire to accommodate their customers' wishes however extravagant or off the wall....what more can you ask for? Oh, and one other thing, order by 11:00 am and it's at my door by 3:00 pm. Unimpressed? I'm in the remote mountains of Western North Carolina. Amazing.
